Ingredients
125g slightly salted butter
150g light brown soft sugar
One egg
Half a teaspoon of vanilla extract
150g white flour - glueten free makes the cookies softer
One teaspoon paking powder - glueten free makes the cookies softer
100g white chocolate
50g fresh or dried cranberries
Equipment
2-3 baking trays
Mixing bowl
Baking parchment
Wooden spoon/Electric hand whisk
Metal spoon
Table spoon
Instructions
1. Preheat oven to 200 degrees C/gas mark 6.
2. Line the baking trays with baking parchment
3. In a mixing bowl, beat the butter and sugar with the whisk until it becomes pale and creamy.
4. Add the egg and vanilla extract a little at a time . Continue beating until they ingredients are thoroughly combined.
5. Using the metal spoon, stir in the flour, baking powder, chocolate and cranberries with two table spoons of cold water, again mixing until thoroughly combined
6. Place heaped teaspoons of mix onto the baking tray, leaving plenty of room for the cookies to expand during cooking
7. Bake for 15-20 minutes until the cookies become golden brown.
8. When they have finished cooking, leave tho cookies to cool on the tray for 2-3 minutes, then place the cookies onto cooling racks.
9. Store them in an airtight container in the fridge.
