Ingredients
450g stewing lamb
One tablespoon olive oil
two garlic cloves
400g Passata
Twelve pitted black olives
25g fresh basil
Lentils/Mashed potato
Equipment
Frying pan
Flameproof casserole dish
Baking tin
Tin foil
Instructions
1. Preheat the oven to 160 degrees C/gas mark 3. Heat the oil in the dish over a medium heat.
2. Add the lamb and fry until golden brown all over (do this in batches)
3. Return the lamb to the pan. Add the garlic and cook for a furthur 2 minutes
4. Pour the passata in and stir olives, half the basil and seasoning in with the lamb.
5. Cover and transfer to the oven. Bake for one hour until the lamb is tender.
6. Scatter with the rest of the basil and serve with the lentils or mashed potato.
